Corine's Cooking Corner.

I made the best dish tonight and I wanted to share the scrumptious recipe.

Corine's Orange Chicken over veggies and pasta.

1 boneless skinless chicken breast
Frozen Broccoli and cauliflower (Half a cup)
Orange juice (half a cup)
1 teaspoon light soy sauce

Marinate a chicken breast the size of the palm of your hand for one hour in the following mixture

Half a cup of orange juice (Orange juice from Jacks 99 stores)
1 teaspoon light soy sauce (From Jacks 99 stores)
fresh ginger finely chopped (From chinatown)
1/2 teaspoon of chopped garlic (From chinatown)


In a bowl mix the orange juice, the soy sauce, the chopped ginger and garlic in a bowl. Dip the chicken breast in the mixture and put on both sides and marinate for 1 hour.

After an hour put the chicken breast and mixture into a wok without any oil and add a cup of water to the mixture. Cook on low heat for 15 minutes until the chicken is totally cooked.

Now, add some frozen broccoli and cauliflower to the mixture and cook until the chicken and veggies are totally cooked. Add a teaspoon of light brown sugar and a tiny bit of garlic powder to the wok. Chop the chicken into bite size pieces and put on top of thin angel hair pasta.

I used the boneless frozen chicken breast from Trader Joe's. This dish was delish and everything was steamed without any oil or butter and it was not fried.


Most of the ingredients were purchased at Jacks 99 stores for $1.29 or less except for the chicken which was a large bag of frozen organic chicken breasts for under 8 dollars.

This dish per serving was around $3.00 to make. Cheaper and healthier than the Orange chicken I would get at a chinese takeout place and there was no oil and fat. The quality of the chicken was far better than any chinese takeout place.
